Lite almond creme brulee

Ingredients
- 3 egg yolks
- 4 teaspoons of granulated sugar, divided
- 1/2 teaspoon of almond extract
- 150ml of low-fat milk
method
Step 1
Preheat the oven to 300F.
Step 2
Stir together the milk and the almond extract. Warm in the microwave for 30 seconds. Meanwhile, whisk the egg yolks with 2 teaspoons of granulated sugar.
Step 3
Pour equal quantities of the mixture into small ramekins. Place the ramekins in a baking dish, large enough to hold them. Add enough boiling water to the baking dish to reach three-quarters of the height of the ramekin. Bake for 1 hour 30 minutes until the mixture has set and remove from the oven. Remove each ramekin from the water and allow to cool to room temperature.
Step 4
Allow the ramekins to chill in the refrigerator for 3 hours.
Step 5
When the ramekins have chilled, remove them from the refrigerator and allow them to sit for 30 minutes prior to browning.
Step 6
Sprinkle 2 teaspoons of the granulated sugar over the top of each ramekin. Using a torch, melt the sugar to form a crispy top.
Allow the creme brulee to cool for 5 minutes before serving.
Notes
If you do not have a torch, place the creme brulee under a broiler for 2-3 minutes, or until the sugar browns.
