Equipment

  • 1 8×8 glass baking dish
  • Food processor, hand blender, or whisk (for mixing)

for the crust

  • 10oz of honey flavored graham cracker crumbs (or digestive biscuits)
  • 2 tablespoons of granulated sugar
  • 6oz of salted butter, melted

for the filling

  • 4oz of cream cheese (or low-fat cream cheese)
  • 1/4 cup of confectioners sugar
  • 8oz of heavy whipping cream

for the sauce

  • 6oz of fresh strawberries, blended
  • 3 tablespoons of granulated sugar

  • 12oz of fresh strawberries, thinly sliced

method

prepare the crust

Preheat the oven to 350 F.

In a large mixing bowl, stir together the graham cracker crumbs, melted butter, and granulated sugar, until thoroughly combined.

Press the crumbs into the bottom of an 8×8 glass baking dish to form a 1 cm layer.

Bake at 350 F for 20 minutes, or until the top begins to brown and the edges begin to darken. Then, remove from the oven and let cool for 1 hour 30 minutes.

To crush graham crackers without the aid of a food processor, put the graham crackers in a Ziploc bag and roll over them with a rolling pin.
