Pea Soup


Serves: 2 people

Ready in: 50 minutes
Prep time: 5 minutes
Cook time: 25 minutes
Inactive time: 20 minutes

Ingredients

for the soup

  • 1 small onion, diced
  • 2 cups of frozen peas
  • 2 cloves of garlic, grated
  • 1/2 cup of chopped celery
  • 2 tablespoons of butter
  • 1 cup of water
  • 3/4 teaspoon of salt
  • Black pepper, to taste

for the Roux

  • 1 cup of milk
  • 3 tablespoons of salted butter
  • 1 tablespoon of all-purpose flour

Or, in place of the roux

  • 3/4 cup of part-skim ricotta cheese

Method

step 1

Melt the butter in a saucepan over medium low heat. Add in the onions and cook until translucent (about 5 minutes). Add the celery and garlic and stir.
Then, add the frozen peas, water, and salt. Bring to a boil and let it simmer for about 15 minutes, or until the peas have softened. Let the mixture cool for about 20 minutes, or to room temperature.

While the mixture cools, make the roux: First, melt 3 tablespoons of butter. Then, slowly stir in the all-purpose flour. Finally, slowly pour in the milk, preventing any clumps from forming by squishing any clumps that do form. Or, use ricotta cheese, if you are not making a roux.

Mix the roux (or ricotta cheese) with the pea mixture and blend until smooth using a food processor or a hand blender.

Pour the blended mixture back into the saucepan. Bring it to boil and reduce it to a simmer. Let the soup simmer for 5 minutes. If the soup is too thick, add another cup of water.

Spoon the soup into individual serving bowls. Let the soup cool before enjoying.
