Ingredients
- 6 ears of corn
- 2 tomatoes
- 2 cups of water
- 1/2 teaspoon of grated ginger
- 2 cloves of garlic, grated
- 1/2 cup of chopped cilantro, packed
- 1 medium potato, chopped into 1 centimeter cubes
- 1/2 teaspoon of ground cinnamon
- 1 teaspoon of ground cumin
- 1 tablespoon of shredded coconut
- 1/4 teaspoon of chili powder
- 1 teaspoon of ground turmeric
- 1 tablespoon of olive oil
- 1 tablespoon of cumin seeds
Method
Step 1
Remove the kernels from the cob. Blend 1 cup of the corn with the tomatoes and 1 cup water.
Step 2
Heat the oil in a large pot. Add in the cumin seeds and stir until fragrant and the seeds start moving.
Step 3
Pour the corn mixture into the pot with the remaining 1 cup of water. Add the remaining corn and the potato, and stir.
Step 4
Add in the ginger, garlic, cilantro, salt, cinnamon, ground cumin, chili powder, and coconut.
