Yields: 16 3-inch pancakes (serves 4)

  • A nonstick skillet

ingredients

  • 1 1/2 cup of rolled oats
  • 1 1/2 cup of milk
  • 2/3 cup of all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon granulated sugar
  • 2 eggs, whisked
  • Butter, for the pan

method

Step 1

Blend the oats until a powder forms and pour the powder into a large mixing bowl. Add in the milk and the whisked eggs. Then, mix in the baking powder and all-purpose flour.

Step 2

Heat a nonstick skillet over medium-low heat. Add 1 teaspoon of butter to the pan and swirl to coat. Pour the batter in 2-tablespoon portions, cooking 3 at a time. Cook until the bottom is golden brown, the edges begin to dry, and bubbles form on the surface (about 3 minutes). Flip the pancake and cook until the other side is golden brown (2 minutes).

Step 3

Transfer the cooked pancakes to a plate. Repeat step 2 for the remaining batter.

Storage

Place any leftovers in an airtight container and store in the refrigerator for up to 3 days.
